An inspirational organic wine that's as delicious as it is remarkable. Made from a blend of 3 red grapes, Croatina, Dolcetto and Barbera, with a white grape, Cortese the main grape of Gavi, offers a unique experience that can also take you on an unexpected, yet fabulous journey. This one time only organic wine is a true testament to the labour and belief in the Biodynamic philosophy.
With the smoky aromas consistent of a traditional Barbera prevalent, the enchanting red/purple colour and violet tones make you realise this opulence is very much in the tasting. With dark cherry, black forest fruits and eucalyptus scintillating the palate, the earthy minerals, smoky texture and lighter body offers a surprisingly clean finish.
To get the most of this very limited production organic wine, try popping it into the fridge for 15-20 minutes and enjoying over 2 courses of dinner. When its chilled to the point of rounding the room temperature off slightly, the aeration and increase in temperature offers something very special indeed. Our suggestion, duck breast or a chestnut wellington, followed by a mature cheese board or baked Alaska.

Please note that these wines are 100% Natural. It means that it’s taste and flavours are different from what you can expect of conventional wine. This wine is vibrant, playful, can contain a bit of fizz and sometimes naturally occurring sediment. We recommend to aerate it and sometimes lightly chill.
Old-fashioned sickles are used to hoe the weeds, the vines are fertilised with manures from their cattle as well as green fertilisers composed of clover and weeds. Stainless steel vats are used to ferment the wines with only 1020 bottles.
The co-operative was born over thirty years ago. At a time in which increasing numbers of people had moved to the cities and to factory work, three young men from local farming families got together to discuss the future of farming in this area. They were deeply attached to the work and to their own land, but they wanted to find new ways of using traditional methods. To begin with, they merged their vineyards and built stalls for farm animals so they could use organic manure to fertilise their fields and vines. The old ways were combined with a very modern belief in organic farming as the way of the future, as part of the wider project known as ‘contraction’, involving reducing the human impact on the natural environment.
