In a world where Prosecco could be used as currency, Marco Cuscito is working tirelessly to maintain the authenticity of this internationally adored sparkling wine, whilst also maintaining the tradition and respect of the environment in what is a truly great Italian legacy.

The Wine

This natural sparkling wine has a brillant pale straw yellow colour with greenish hues and very fine and persistent perlage. On the nose it is multi-layered and complex green apple, pear, stone fruits enriched by delicate floral notes. On the palate it is very creamy and elegant perlage. Ample, vibrant and persistent on the finish.

The Producer

Marco Cuscito worked tirelessly renovating the vineyards, and replanting the vines for Prosecco Superiore DOCG. With only 12 ha of vineyards, careful pruning each year, 60% of the harvest is done by hand, and only estate grown grapes used, the quality of the resulting wine is exceptionally high, making these very much artisanal wines.

The Vineyard & Winery

The life of the Giavi farm started as early as 900 AD and Prosecco in its current form has been made there since 1914. The vineyards cover an area of around 12 hectares on a hillside overlooking the town of Conegliano. Almost all of the harvest is done by hand and the quality of the resulting wine is high, full of purity and freshness of fruit, making these very much boutique wines.

Soft pressing of the grapes, static decantation and fermentation at controlled temperature. The second fermentation takes place in stainless steel tanks (cuvée close) at a controlled temperature with selected yeasts and lasts 120 days. Tartaric stabilisation at low temperature and bottle refinement for a minimum of 1 month.
