The History: Inspired by the quality of the wines produced by their neighbour Romano dal Forno, the seven brothers and cousins who own Ilatium Morini decided not to sell the grapes from their best blocks to the local Cantina Sociale as they and their fathers had done for years but to make dry white wine from them themselves.

Since their first vintage in 2004 the torrent of accolades; including an IWC Gold for their Amarone and high ratings from Jancis Robinson; would suggest that they made the right decision.

Now firmly established at the forefront of the new wave of quality modern producers of Soave, Valpolicella and Amarone the wines combine beautiful fruit concentration with fresh, bright acidity that makes a second glass (or bottle) almost impossible to resist.

Viticulture: Today the winery cultivates 40 hectares with plots spread across Valpolicella and Soave. Healthy fruit at peak ripeness is hand harvested and air dried for 100 to 120 days in small baskets.

Winemaking: The appassimento technique of air drying grapes is used- not only in the production of Amarone and Valpolicella Superiore but also in the single vineyard Soave wines and adds an intriguing level of complexity for this dry white wine. No oak treatment.

Suave Soave

This was a very lovely wine, nice minerals well balanced and good depth. Will buy again

Good flavour

We all enjoyed this very quaffable. A slight appley flavour but soft enough to not be sharp. Notice that once opened the flavour dulls overnight despite recorking but that’s probably understandable with these types of wines. This is only my 3 different bottle No headaches hurrah!

Lovely wine

I am very pleased and impressed with this wine. It has a natural full of flavour taste and no sulphites either. Will definitely buy again.

A drop of heaven

Green, fruity, makes me think of gooseberries but with the minerality others have suggested. A luscious white suited as much to everyday quaffing as to celebrations.

Needs Food

I found it a bit heavy and not for drinking on its own. Very enjoyable with food.

Organic Wine Club

Hi Margaret, Thanks for adding your review! The Soave is a great wine, that indeed is slightly bigger than usual for a white wine. Serving this super chilled with some paella, sea bream or spicy Asian dishes will help this wine seem lighter. Thanks again! Alex Co-Founder
