Working with farmers in Cuenca who grow grapes much as they have done for centuries, cultivating old bush vines on sandy chalk soils, in a hot dry climate they have never used, nor needed chemicals.
Low yielding vineyards were selected and ripe fruit chosen to create a wine suitable for any occasion. The vineyards are closely monitored so grapes are picked at their best and the state of the art winery is well equipped with the most modern winemaking machinery to create fantastic wines.
