This lightly-herbal southern French Pinot Noir has crunchy summer berry fruits and a good, long length of flavour in the palate. Draped in cherry red tainted with raspberry, this Pinot offers the delicate perfume of freshly ripened cherries, the Mediterranean garrigue and a floral touch of peony, a full and generous mouth feel, good balance between fine tannins and delicate aromas.
Serve at 15 -16°C with grilled vegetables and meat, poultry.
Chunkier than some Pinot Noir's this wine can certainly carry more flavoursome foods.

Growing conditions: Our terroir consists of loamy – chalky marls limited in depth by sandstone rock, situated in the most Mediterranean part of the Cabardès but with a climate moderated by Atlantic influence. Son of the Languedoc but cousin of the South West. Organic Wine, certified by FR BIO 01. The picking, spread over more than a month is mostly done by machine. The evolution of the maturity of the grape variety is respected. A young vine planted with 4500 stocks/ha on a drained lot which faces the north. Locality Majelus. Vinification: The grapes are destemmed and their own yeasts assure the fermentation in stainless steel or concrete tanks. First comes a cold pre-fermentary maceration. There is a limited addition of sulphur and a smooth aeration in order to extract only the very best. A more or less long « infusion » together with many tasting will determine the right moment to press (pneumatic.)
You can drink it now, but ages for 5/6 years.
