A small family managed vineyard on the island of Sardinia, benefiting from the warm Mediterranean climate providing hot and dry summers and mild winters.
The harvesting begins early in September and harvested manually in the early hours of the morning. The grapes are then inspected and sent into the winery for a soft pressing.
The grapes are de-stemmed and macerated for 40-45 days. Fermentation is at a controlled temperature of 20-25 degrees.
The wine is aged in French oak for 9 months and then another year in the bottle for refinement.
