Golden amber in the glass with a nose of wild honey, but dry, and unexpectedly, full-bodied in the mouth with background notes of walnut and apricot.

Short story: Gela Patalashvili jointly owns this project with John Wurdeman and some European investors. The idea behind the project is to revive traditional Georgian wine culture which had effectively disappeared under Soviet occupation. Georgia or the Transcaucasus lays claim to the birth of modern wine civilisation (8,000 years of tradition). Pheasant’s Tears and like-minded growers are rediscovering ancient indigenous grape varieties – Georgia has around 540 and counting, working with traditional farming and winemaking implements and using the famous qvevri; massive clay eggs which are buried in the earth.
