An organic Soave that is as fresh as a daisy that has a striking rich and exotic nose.
Rich ripe rhubarb and custard with a straw and herb edge to the savoury nutty palate. Excellent minerality.

The History: Inspired by the quality of the wines produced by their neighbour Romano dal Forno, the seven brothers and cousins who own Ilatium Morini decided not to sell the grapes from their best blocks to the local Cantina Sociale as they and their fathers had done for years but to make dry white wine from them themselves.
Since their first vintage in 2004 the torrent of accolades; including an IWC Gold for their Amarone and high ratings from Jancis Robinson; would suggest that they made the right decision.
Now firmly established at the forefront of the new wave of quality modern producers of Soave, Valpolicella and Amarone the wines combine beautiful fruit concentration with fresh, bright acidity that makes a second glass (or bottle) almost impossible to resist.
Viticulture: Today the winery cultivates 40 hectares with plots spread across Valpolicella and Soave. Healthy fruit at peak ripeness is hand harvested and air dried for 100 to 120 days in small baskets.
Winemaking: The appassimento technique of air drying grapes is used- not only in the production of Amarone and Valpolicella Superiore but also in the single vineyard Soave wines and adds an intriguing level of complexity for this dry white wine. No oak treatment.
