Organic Amarone, at last!
A great representation of an age old traditional Italian style of wine. With an opulent ruby red colour, the bouquet is enveloping and fully abundant with fruity notes of cherry, blackberry and stewed red fruits with some interesting hints of cloves, cocca and tobacco.
This is a softer wine than expected, but intense in the mouth. With a smoldering finish as the tannins are long and persistent. This wine is best opened for around an hour before drinking.
grapes: Corvina 60%, Rondinella 30%, Molinara 10%
sugar: 0 added sugar, residual sugar 36g
sulphites: 33 mg/l of combined naturally occurring and added sulphites
Food Match: Braised beef, stews, game meats
The vineyard is located only 200-300 meters above sea level and the soils are made up of clay, alluvial gravel and tuffaceous with calcareous marine rocks. The vines are grown in the pergola system that are then selectively hand harvested. The collect the most sparse bunches to be dried from the end of September until the 10th October each year.
The grapes are then stored for around 4 months in wooden boxes that are kept in temperature controlled locations that also help to control the humidity.
The grapes are then pressed in January and February and then fermented in steel. The wine makers however have there own traditional family techniques that have been handed down over the generations when it comes to stopping the fermentation early to create a sweeter red wine.
